You can't be certain if you're ovulating right then from the egg white discharge alone but its a good sign you are , the stretchier it is the more likely you're close to ov time, it tends to go within about 24 hrs of actual ovulation ,from when you had sex if the egg white discharge had gone by then its not likely you would conceive as you only have a 12-24 hr window max from when the egg is released to fertilise it , so if the discharge was a sign you were ovulating Tuesday/Wednesday then sex on Friday or Saturday would be too late, but you could still get lucky if you had sex before the Tuesday/Wednesday , the best time really is just before you ovulate , so if after your period you notice you're getting the thinner clear discharge that's a good sign to start having sex and try and carry on every 2 or 3 days until after the egg white type has gone , as the sperm can live around 3-5 days (even up to 7 if things are just right) but the egg only lives one day max so if the sperm is there waiting there's more chance of getting pregnant . Good luck xx

It's still possible as sometimes as the discharge gets stretchier around actual ov time it can tend to stay up near the cervix so maybe you could have still had it just not realised
The only way to know for sure is cervical checking which I know some women are squeamish about but it really does give some very good clues especially just after ov as things do change very quickly then.
If your OH works away then maybe opk's would help ? Then at least you'd know for sure when it was ov time and what you're chances were ? Some women find when they try them that they don't ov when they thought they did and if you try them one month and pay close attention to other signs it can really help you notice those signs for following months
It helped me anyway
There's even something called Noresthisterone that you can get from the GP, women use it to delay a period for holidays etc. If he has a regular pattern of work and you're likely to miss ovulation a lot then delaying a period one month could help get your cycle on track so the timings better for him being at home, I know from the forums some women do use it for that , but I'd probably tell the doc I was going away
