I tried making the Annabel Karmel fish with orange juice but didn't like it much. I remembered cooking a nice fish with tomato recipe at school and tried to make something like that - this is a nice, simple, healthy idea for white fish. Put a few dots of butter or garlic butter in the bottom of an ovenproof dish. Pour in a tin or two of chopped tomatoes (depending on the number of servings) and a chopped onion. Add a pinch of salt and a small teaspoonful of sugar, and if you like some pepper and mixed herbs. Add your fish and spoon the sauce over it a bit. Cover with foil or a lid and bake at 180 for half an hour. Serve with rice and greens. Easy for an older baby to eat as well (not that mine liked it). _________________
