Post subject: Pasta with Leeks, bacon, mozerrella and tomato!!
After being in chat the other night and eating at the same time some of you asked for the recipe! So here goes!! Its not a recipe as such more of a cook it and chuck it together!!! Like most of the food I make! lol!!
Put your pasta on to boil, then chop bacon into strips (its easier to do this with scissors), I usually do 3 slices of bacon per person and stick into a frying pan and put on the heat!! Add some crushed garlic. Chop leeks in half lengthways then into rings (I use baby leeks cause i prefer the taste) and add to the frying pan with the bacon. Once the pasta has cooked drain into sieve and put to one side.
Then put a tin of chopped tomatoes (1 tin per 2 people usually works well) into the pan and start to heat through. Add plenty of tomato puree and stir til the juice thickens. Add the cooked bacon and leeks. Chop the mozerella ball into chunks (1 mozerella ball per 2 people) then add to the tomato. Leave some aside for topping when serving. Once the mozerella starts to melt a little add the pasta and stir in well! Once its all warmed through then serve. Grate plenty of fresh parmesan over the top and sprinkle the mozerella over and then enjoy!!!
This takes about 10-15 mins to cook and is yummy!!!
You could do this with chicken instead of bacon if you prefer or asparagus instead of leeks if you prefer that or leave the leeks out totally!
I have quite a few more recipes like this cause i eat a lot of pasta cause I have IBS and its one of the things I can eat!! I have wheat free pasta which is good for IBS but any pasta can be used!!! and I will put them up as I remember!!!
