sounds so simple and maybe discusting but when we were in ireland Oh's family made us garlic potatoes. he boiled the potatos and then put garlic butter out of a tube in the middle then backed them in the oven.
simple and weird but so so nice _________________

I boil some new potatoes then put them in an oven dish coat with a bit of olive oli then grind some dried garlic onto them or you can use fresh then cook in oven till potatoes start to turn brown. x _________________

I have a couple
Garlic and THyme Roast potatoes
10-12 potatoes, peeled (and halved depending on size)
2 tbsp vegetable oil
4 sprigs of fresh thyme
4 garlic cloves
salt and pepper
Boil some water then balnch potatoes for 3 mins, drain
Heat oil then place potatoes, garlic and thyme in oil, tossing to coat
Cook for 40-50 mins at 220c
Or
10 new potatoes, boiled in their skins
2 tbsp fine breadcrumbs
2 tbsp grated parmesan
2 eggs, beaten
oil, for deep frying
55g/2oz butter
2 garlic cloves, finely chopped
½ tsp parsley, finely chopped
salt and pepper
1. Skin the potatoes while still hot and roll in the breadcrumbs and parmesan mixed together. Dip in the beaten egg and roll the potatoes in the breadcrumb mix again. Heat the oil to 350F/180C and deep-fry for 5-6 minutes until golden. Drain on absorbent kitchen paper and keep warm.
2. Melt the butter, cook the garlic until golden, season, mix in the parsley and pour over the potatoes. _________________
