Post subject: Recipe suggestions please....
I need some suggestions of what I can do with my potatoes tonight. I always struggle with this one as I have some fussy eaters in my household and a diabetic for whom I have to be able to weigh out his carbs before he has them. Other than boiled, roast, jacket, wedges, chips or mash what can I do with my Maris Pipers??????????? Oh and whatever it is it's to go with chicken breasts, which I haven't decided on how I'm doing them yet, will after I know what potato dish I'm doing.

Please suggest something I can cook .............xxxxxxxxxxxxxxxx

I already do floop, I add cheese and onion to mash but I'm not a great lover Rosemary on my roasts. I was thinking of doing roasts as I haven't done them in a while though xxx

Use goose fat, its expensive compared to normal oil but it tastes AMAZING! Very Happy

you could do a chicken and potato stir fry, or make rosti's

I would do the chicken breasts stuffed with cream cheese, mushrooms, pesto and cherry tomatoes and then cut the potatoes into thick chunks with the skin still on and shallow fry them with garlic and thyme until cooked, not massively healthy but yummy

Potatoes Dauphinoise are amazing. Really creamy and delicious. There's a good recipe on the BBC website here:

Thanks for your suggestions ladies. I did roasts in the end as I had some goose fat in the fridge and was running out of time. Having just read the rest of your replies I'm feeling hungry again now. I personally would have all of what's been suggested, especially the chicken mandy!! But at least one person in the family wouldn't eat each one of the suggestions made. Thanks again ladies xxxxxxx
