I've had a few requests from people wanting a recipe for a sponge cake suitable for birthday cakes. This is the one I use and will do an 8" cake
Ingredients
225g caster sugar
250g unsalted butter
250g self raising flour
4 large eggs
1tsp of vanilla extract or essence
Method
Preheat oven to 180c and grease or line two cake tins
Mix the butter and caster sugar until it starts to go white, if you're using an electric hand whisk then you need to whisk for at least 5 mins, if a food processor then a couple of mins on a medium setting
Add your eggs, individually, mixing each one in thoroughly before adding the next one otherwise the mixture will curdle.
Sieve in the flour and add the vanilla, it's really important to sieve as it allows lots of air into the mixture which will help it rise properly, if you're using a food processor mix it in on the lowest setting if you're doing it by hand, fold in with a wooden spoon.
Pour the mixture into your two tins equally and level out with a palette knife or the back of a spoon to give a flat top.
Bake for approx 35 mins, to test if cooked, place a thin metal skewer in the middle, if it comes out without any mixture on it's cooked.
Turn onto a cooling rack and allow to cool before adding your filling and decorating.
Fill with jam and buttercream _________________

For a choccie cake Mandy would I just add cocoa powder and do it the same?
I got a recipe online for choccie cake but its rubbish!!

Yep add 1 and a half tablespoons of cocoa powder when you're mixing the butter and sugar together, it's really yummy, I made one the other day for my nieces birthday and was delicious _________________

yes make sure you put some pics up, how are you decorating it Vickie? Chloe is having two parties so am doing 2 cakes, the first one is an INTG cake and the second one is an enchanted house, bit like the gingerbread house in hansel and gretal with all the sweets and things around it _________________

mine didn't really rise
how "thick" should each cake be mines about 1.5 inches lol. _________________

mummajade, did you preheat the oven for long enough?
I have to say I've never had one not rise with this recipe  _________________

It kinda rose but not as much as I was expecting it too... I had to mix the sugar and butter by hand as dnt have anything electric I couldve used to think maybe I didn't get enough air into it?
Once I'd put the pieces together it had risen and was totally yummy with my chocolate fudge icing I made YUMMMM
Gonna try again when I gget a proper eletric mixer  _________________
