consulted my recipe book & this sounds really easy; three minute sponge
1cup plain flour
3/4 cup sugar
3 tbsp melted butter
2 tbsp milk
2 tsp baking powder
(jam & whipped cream to make a victoria sponge type cake if you want to)
Put flour sugar eggs butter & milk in bowl, mix with electric mixer on high for 3 mins. stir in baking powder. pour in two greased & lined 20cm sponge sandwich tins. Bake at 190 for 15-20 mins or til cake springs back when lightly touched. Leave in tin for 5 mins before turning on to wire rack. when cold sandwich together with jam & whipped cream.
FOR A LEMON SPONGE just add 2 tsp grated lemon rind to above mixture.
And I guess if you dont want to make a sandwich-ey cake then just put it all in one tin & bake it for longer.
If you do try it, hope it works out ok for you. As i said I havent made it before - so I wont be responsible for if it doesnt work out!
