Post subject: soup recipies anyone got some nice ones? I know there are 100s on line but I need some tried and tested.
I have a lovely one for mushroom soup but did the dog on it and now I cant eat it I used to make a veg soup when my lo was small, carrots, onion, potato, parsnip and veg stock and very bored of that now. I did have one out the other night and there wasnt a carrot insight, think it was potato and onion and other things and that was lovely. I am gone off food at the moment so think making soup will be my thing for a bit, could be worse, it could be chocolate or chinese _________________

Post subject: Ingredients:
• 1 tbsp margarine • 1 onion, chopped • 1 1/2 pounds carrots, peeled and diced • 1 tsp fresh ginger, minced or grated • 2 tsp coriander seeds • 4 cups vegetable broth • dash salt and pepper, to taste Preparation: In a large pot, cook the onions in margarine until soft, about 3 to 5 minutes. Add carrots, ginger and coriander and cook, stirring for a few more minutes. Add the vegetable broth and bring to a low simmer. Cover and cook for at least 25 minutes, or until carrots are very soft. Transfer the soup to a blender or food processor and puree, working in batches if needed. Add a dash of salt and pepper and serve hot, re-heating if necessary. Posted: Mon Apr 18, 2011 6:40 am

Post subject: Mine which is foolproof is a winner with my family and siooooo healthy-it's sweet potato and leek:
Roughly chop 2/3 leeks and peel and chop 2 sweet potatoes. Fry leeks off in a bit of oil-i use light olive oil , just till softened a few mins. Put a filled kettle on to boil Add the chopped sweet potato and pinch if salt and lots of pepper if u like, add hot water to just cover then a chicken or veg stock cube for more flavour put lid on and turn heat to low. Cook for about 30 mins or till pots are breaking up and v v soft. Add herbs if u like-pinch of cumin is fab or maybe done thyme. Blend in batches but I just keep in saucepan and use the hand blender which takes a min and less fuss and washing up. If too thick add touch water and/or seasoning-like it peppery! If u want to be a bit indulgent add bit if butter or creamand stir well it makes it more special and that's what I do when I have dinner parties-it goes down so well. I plan to make this (purée) for my lo when he's born and onto solids lol Enjoy!! Xxx _________________
