Here's a naughty but nice one to get things started (really easy to do!!)...

Chocolate Cheese Cake...

Base:

6oz Digestive Biscuits
2oz Melted Butter

Crush biscuits and mix with butter and press into base of spring form tin and bake for 10 mins on 150oC.

Filling:
8oz Phil Cheese
1½oz Caster Sugar
1 tspn Vanilla Essence
2 Egg Yolks
6oz Plain Chocolate
2 Egg Whites
1½oz Caster Sugar
6oz Double Cream

Soften cheese, add sugar and vanilla essence and blend with yolks and melted chocolate. Beat egg whites well, gradually beat in sugar. Fold lightly whipped cream. Pour over crumb base and chill until firm.
