Post subject: Raspberry and white chocolate cheesecake
i invented this myself, so it may take a bit of typing. I supply the local coffee shop with homemade goodies, so if there is recipe you'd like, or any baking tips just ask Smile

You will need a springform tin and electric whisk.
lightly butter the inside of the tin sides and line with baking paper.

For the base you need 1 1/2 packets hobnobs & 5oz butter, melted.
crush the biscuits and combine with the melted butter. Compress into the base of the tin.

Filling.
4 x 300g full fat soft cheese (morrisons is ideal)
1/2 pint double cream
7 tbsp icing sugar
1 200g bar good quality white choc
3 sachets of vegegel (from Tesco or Morrisons)
Raspberry conserve
fresh raspberries for decoration

Whisk cream with cheese and icing sugar until thick. Melt the chocolate and add to the mix, whisking quickly. Add the vegegel and combine. Put half the mix onto the biscuit base. spoon over the conserve in patches, add the rest of the mix and smooth top. Place the raspberries round the outside (you can also drizzle white or dark choc over top) and leave to set in fridge for 3 hours (pref overnight). Enjoy

Thanks Julie Very Happy
