A really nice soup - I wont put down exact quantities as I think its personal preference as to what you use, but this soup is really tasty and easy to make - can also be frozen, so brilliant for when you don't have the energy to cook!!
Its a west-indie style soup which I picked up from an amazing chef when I was in the RAF!
You can use lots of different types of veg for this - basically anything you have lying around but I tend to use
Carrots
Onion
parsnips
red peppers
potato
plenty of thyme
chives
a pinch of chilli powder (or fresh chilli if you have it!)
a pinch of paprika
lentils
double strength chicken or lamb stock
and some herby dumplings (i cheat and buy packet mix then add some mixed herbs lol)
all you need to do is cut all the veg into nice chunks and put everything into a pan (except the dumplings!) and simmer for about an hour - hour and a half - then using a potato masher - mash, but leave the soup quite chunky! then return to the heat with the dumplings added for about half an hour - beautiful!! hope you like it as much as I do!
