Post subject: Carrot Cake Sift 300g of plain flour, 1 tsp cinammon, 1 tsp baking powder, 1 tsp bicarbonate powder.
stir in 200g soft brown sugar. Beat 4 eggs, mix with 250 ml oil, and the zest of 1 lemon and 1 orange. Mix the egg mixture and the flour mixture together. Fold in 200g grated carrot. Cook at 150o pre-heated oven for 1 hr 30mins. For the frosting cream 125g unsalted butter with 50g sift icing sugar mix in 250g mascapone soft cheese. Chill in the fridge before speading on the cake.
