Post subject: Carrot Cake
Sift 300g of plain flour, 1 tsp cinammon, 1 tsp baking powder, 1 tsp bicarbonate powder.
stir in 200g soft brown sugar.
Beat 4 eggs, mix with 250 ml oil, and the zest of 1 lemon and 1 orange.
Mix the egg mixture and the flour mixture together.
Fold in 200g grated carrot.
Cook at 150o pre-heated oven for 1 hr 30mins.
For the frosting
cream 125g unsalted butter with 50g sift icing sugar
mix in 250g mascapone soft cheese.
Chill in the fridge before speading on the cake.
This was sooo scrummy... very moist.
