Post subject: I've used it in with other grilled veg.
Roughly chop a Zucchini/aubergine, a courgette, a mild onion/red onion and a handful of mushrooms then mix with garlic cloves and whole cherry tomatoes. Rub the whole lot with an olive oil, salt and pepper mix and place under the grill and turn occassionally. Takes about 20 to 30 minutes depending on how finely you've chopped everything and can be served with pasta or couscous. Is pretty simple and doesn't take very long. Post subject: I hated both courgettes and aubergine until this year, I guess if you cook them with flavours you know you like it will help. Adding bacon to that mixture is really tasty. Neither have much flavour on their own, it's more about the texture and how easily they take on the flavours of seasoning.
