These are delish and perfect for those biccie loving people (like me!!!)
Ingredients:
250g butter
125g caster sugar
125g cornflour
250g plain flour
Mix butter and caster sugar in a bowl. Add cornflour and plain flour and mix together well until a dough forms.
Knead the dough until it's as smooth as possible and then on a floured surface roll until about 1/2 inch thick.
Cut circles or whatever shape you want.
Put on lightly greased oven sheet.
Bake at 200 degrees/Gas mark 6 for about 20/25 mins. Tops should just start to brown.
Take out of oven and sprinkle with caster sugar then leave to cool.
* I sometimes add choc chips or sultanas to dough mixture before baking!
