I got this recipe from a James Martin book, Great british dinners. It is a really easy recipe and I have found comes out amazing!
300ml sunflower oil
225g soft brown sugar
4 medium eggs
175g golden syrup
350g s-r flour
2tbsp cinnamon powder
1 tsp bicarb of soda
275g grated carrot
Pre heat oven to 180c/350F/ gas mark 4
grease 2 x 500g (1LB) loaf tins
Put everything in a blender and blend together and pour into loaf tins.
bake for 40-50mins. Leave 10-15 mins before turning out.
I personally put everything in a bowl and used electric whisk. Also don't fill the loaf tins more than half full. There will be more mixture than is needed.
The frosting I don't know where it came from, somewhere on the internet!
200g cream cheese
120g unsalted butter at room temp
500g icing sugar
1tsp vanilla
1tsp cinnamon
Cream together the cream cheese and butter
Add the icing sugar in small amounts until it is all combined.
Stir in the vanilla and cinnamon.
