Post subject: Hot cross Buns
1 large egg, beaten
7½fl oz. warm water
½ oz. fresh yeast
1 tsp sugar
2oz. Strong white flour
1lb strong white flour
1 teaspoon salt
2 teaspoons ground mixed spice
3 oz. butter cut into cubes
3 oz. sugar
1 lemon, grated, zest only
6 oz. mixed dried fruit
2 tablespoons plain flour
oil, for greasing
1 tablespoon of golden syrup, gently heated, for glazing
Preparation Pre heat the oven to 240 °C
Mix the beaten egg with the water.
Add the yeast, sugar and flour and whisk well.
Cover with a tea-towel and leave somewhere warm and drought free for 30 minutes.
Sieve the flour, add the spice and salt, then rub in the butter.
Make a depression in the middle of the mix and pour in the liquid you made in stage one.
Gently fold the mix over the liquid, then mix very well to produce a smooth and elastic dough.
Add the dried fruit to the mix and leave the dough to rise in a warm place for an hour. Cover with a tea-towel again.
Remove the dough from the mixing bowl, knead to remove the air from the mix, then return it to the bowl and allow it to rise again for 30 minutes.
Remove from the bowl again and divide into 10 / 12 pieces. Shape into buns, cover with the tea-towel and leave to rise for about 5 minutes.
Put the buns on a greased tray and push down lightly on the top of each bun to slightly flatten it.
Make two gentle cuts in the top of each bun to leave a cross marking on it.
Place the tray and buns in either a greased plastic bag or a sealed plastic container. Leave it somewhere warm for half an hour.
Mix plain flour with a little water to form a thick paste suitable for piping.
Remove the buns from their container and pipe the flour mix along the cross lines on each bun.
Put buns into the oven and cook for about 10 minutes until golden brown.
Remove the buns from the oven and brush straight away with warm golden syrup.
Leave to cool, then eat.
